    Hi, we successfully made it through the feta recipe and are now ready to age the cheese in the refrig. Should it be covered in plastic to age?

    Without knowing which recipe you used it’s hard to tell, and generally a good recipe will tell you how to properly age your cheese. I store my feta in a saturated brine in a sealed jar in my regular fridge. I like qt mason jars or a similar glass container with a secure lid. I make sure it’s been in the brine at least 24 hours before serving to take off some of the salt from the sweating phase.
